Biography

Prince joined the Annor Lab in the fall of 2019 to pursue his PhD degree in Food Science with a minor in Data Science, where he has been working on improving the commercial viability of Intermediate Wheatgrass (IWG), the first perennial grain to be commercialized for food use, through the development of expanded IWG using extrusion processing. As part of his Ph.D, Prince has also worked on quantifying FODMAPs in different wheat varieties grown in Minnesota and exploring the use of sourdough fermentation to reduce the FODMAP levels in these wheat varieties. Prince has a great interest in data science and analytics, and how it can be leveraged in solving problems and making data-driven decisions in food science R&D, process development, and product development.
