Biography
Takehiro completed his B.S. in Food Science at the University of Minnesota in 2021. His past work includes the profiling of FODMAP of different wheat varieties. His current research involves the profiling of sugar and amino acid content of soybean varieties sampled from across the U.S. using the HPAEC-PAD. He is also currently researching about solid state and liquid state fermentation of intermediate wheatgrass (Thinopyrum intermedium). Takehiro is also exploring the potential of CNN machine learning models in replacing current analytical methods for food samples.
