The Grain Biopolymer Research Laboratory at the University of Minnesota Twin Cities is dedicated to advancing fundamental and applied research on cereal grains and their biopolymeric components. Our work focuses on understanding the structure, functionality, and behavior of grain-derived biopolymers—such as starches, proteins, and dietary fibers—and how they respond to processing, environmental stress, and genetic variation.
Through an interdisciplinary approach that integrates food chemistry, cereal science, and material characterization, the laboratory aims to generate knowledge that supports innovation in food systems, agriculture, and sustainable ingredient development. Our research addresses key challenges related to grain quality, functionality, and end-use performance across food and non-food applications.
